The holidays are arriving and you want to bake something festive! But wait, you have to be careful because you or your child is on the autism spectrum, and is on a strict gluten-free diet.  Fear no more! We have compiled a list of 8 delectable easy-to-make options to pick from this holiday season:

1. Sugar Cookies

Gluten Free Sugar Cookies for people with Autism

Ingredients:

Cookies:

  • 2 ½ cups gluten-free flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup white sugar
  • ¾ cup butter, softened
  • 1 tsp vanilla extract
  • 2 eggs

Icing

  • ¼ cup cream cheese, softened
  • ¼ cup butter, softened
  • 1 tsp vanilla extract
  • 1 ½ cups powdered sugar

 2. Gluten & Casein Free Apple Pie

Gluten Free Casein Free Apple Pie for children with Autism

Ingredients:

Pie

  • 6-8 large tart apples, peeled, cored and thinly sliced
  • 2 tbsp lemon juice
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 3 tbsp cornstarch
  • 1 tsp cinnamon
  • ¼ tsp all spice
  • 1 egg white, beaten until frothy
  • Cinnamon sugar, for sprinkling

Crust

  • 2 ½ cups of gluten-free flour
  • ½ tsp salt
  • ¾ cup palm shortening
  • 1 egg, beaten, with cold water added to make ¾ cup liquid

3. Almond Cake

Gluten Free Almond Cake

Ingredients:

  • 1 ½ cups plus 1/3 cups blanched sliced almonds, toasted
  • 4 1/2 ounces (1 cup) gluten-free flour 
  • ¾ tsp salt
  • ¼ tsp salt
  • 1/8 tsp baking soda
  • 4 large eggs
  • 7 ounces (1cup) plus 2 tbsp. sugar
  • 1 tbsp plus ½ tsp. grated lemon zest (2 lemons)
  • 1 tsp almond extract
  • 4 tbsp unsalted butter, melted (use Earth Balance for dairy free)
  • 4 tbsp vegetable oil

Ingredients:

  • ½ cup butter or dairy-free alternative, room temperature
  • ½ cup brown sugar
  • ½ cup molasses
  • 1 large egg
  • 1 cup brown rice flour
  • 1 cup sorghum flour
  • ½ cup potato starch (not potato flour)
  • ½ cup arrowroot powder
  • 1½ tsp baking soda
  • 2 tsp ground ginger
  • 2 tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ tsp salt

5. Crustless Pumpkin Streusel Pie

Gluten Free Streusel Pie for individuals with Autism

Ingredients:

Streusel Topping

  • 2 tbsp. packed brown sugar
  • 2 tbsp. organic coconut or palm sugar (or more brown sugar)
  • ¼ cup certified gluten-free oats (pulsed once or twice in food processor to break up oats slightly) or Quinoa flakes if unable to tolerate GF Oats.
  • 1 tsp ground cinnamon
  • 1 tbsp. organic butter , or Earth Balance Vegan Buttery Stick, or coconut oil (if using coconut oil, place in refrigerator to solidify)-cut into small pieces

Pie Mixture

  • 1 can Organic Pumpkin Puree, or 2 cups fresh pureed Pumpkin
  • 12 ounces Full-fat Organic Coconut Milk (or evaporated milk, if not Dairy-free)
  • 3 eggs
  • ½ cup granulated sugar (OR 2/3 cup organic palm, or coconut, sugar)
  • ½ cup all-purpose gluten-free flour
  • 1 tsp ground cinnamon
  • 1 ½ tsp pumpkin pie sauce
  • 1 ¼ tsp baking powder
  • 1/8 tsp sea salt

  • 1 cup unsalted butter
  • Cooking spray

  • 1/3 cup light olive oil

  • 1/4 cup flax seed meal
  • 1 tsp baking soda
  • 2 ½ tsp baking powder
  • ¼ tsp sea salt
  • ½ tsp xanthan gum
  • 1 rounded tsp cinnamon
  • ½ cup vegan dark chocolate chips(or use chopped walnuts or pecans)

  • 1 large egg white
  • ½ cup granulated sugar

  • 2/3 cup canned 100% pure pumpkin puree

  • 1 tsp ground ginger
  • 1 tsp gluten-free baking powder
  • 1 ½ tsp ground cinnamon
  • ½ tsp salt
  • 1 cup powdered sugar, plus more for dusting
  • ½ tsp pure vanilla extract

Filling

  • 1 cup powdered sugar, plus more for sprinkling
  • 4 ½ oz. cream cheese, at room temperature
  • 8 tbsp (1 stick) unsalted butter, at room temperature
